Sausage Recipes

 

Herbal Sausage and Vegetable Bake topped with Cheesy Charlotte Potatoes

 

Method: Serves 4

 

Medium ovenproof dish

  1. Preheat oven to 2000C (4000F), gas mark 6

  2. Heat olive oil in a saucepan

  3. Add onion and garlic, salt and pepper. Cover and cook for 5-8 minutes, stirring occasionally until onions are soft

  4. Add the diced peppers and cook for a further 5 minutes.

  5. Add tomatoes and bring to the boil. Season to taste

  6. In the meantime, grill the sausages until goldenĀ  brown, cut into 2 cm thick slices, add sausages to tomatoe mixture and tip everything into the ovenproof dish

  7. Place the thinly sliced potatoes on top of mixture , covering completely

  8. Sprinkle the grated cheese on top of potatoes, half way through cooking

  9. Bake in the oven for 40 minutes until golden brown on top.

Serving suggestion:
Serve this tasty and nutritious dish with a nice crispy salad using mixed salad leaves. Yum!

Ingredients

 

3tblsps of extra virgin olive oil


1medium organic onion, peeled and sliced


3 organic garlic cloves, peeled and crushed


250g organic tomatoes


1 red organic pepper, diced
1 green organic pepper, diced
1 orange organic pepper, doced


225g of Hodgins Award Winning hebal sausages, cut into 2cm thick slices


250g of organic Charlotte Potatoes, thinly sliced


100g og grated Carrigaline


Farmhouse Cheese


Organic sea salt and pepper to taste
