Sausage Casserole

Method: Serves 4

In a large heated frying pan brown the mushrooms. Remove from the pan

Add the carrot & shallots and fry for a few mins until the onions are slightly browned and translucent

Set aside the vegetables and brown your hodgins sausages

Set aside and add the flour to the pan, gradually add the stock & cider and whisk until you have a slightly thickened sauce

Add all the ingredients to a casserole including the apple and fresh herbs

Place in the oven at 180C or allow to simmer on the hob for 25 minutes

Serve with some mash potatoes & maybe a green salad. Enjoy


  • 1 tablespoon olive oil
  • 10 shallots peeled & halved
  • 4 medium carrots cit into batons
  • 10 traditional hodgins sausages
  • 100g peeled mushrooms halved
  • 25g or 1 heaped spoon plain flour
  • 400ml cider
  • 250ml chicken stock
  • 1 teaspoon thyme
  • 1 teaspoon sage
  • 1 golden delicious apple cubed - or similar
  • Some finely chopped fresh parsley
