Omelette Ingredients:
Serves: 2-3 people
Preparation Time: 5 minutes
Cooking Time: 10 minutes
- 5 eggs
- 150g of Hodgins Black Pudding
- Half a red onion
- 1 medium boiled potato
- 150g bacon lardons
- 30g of Irish Cheddar cheese
- Chives
- Salt & pepper
- 1 tbsp Butter
Directions:
- Crack the eggs into a bowl and beat.
- On a non-stick frying pan, add 1 tbsp of butter and let foam slightly. Add the diced onion, black pudding, bacon and boiled potato (chopped into cubes). Fry until all is fully browned.
- Reduce the heat, add the egg mix and make sure all the pan is coated. Grate the cheese on top.
- After frying for 2-3 minutes, pop the pan under the grill to cook the top side.
- Serve with some chopped chives and sourdough bread – (optional)
