Black Pudding, Potato and Bacon Lardon Omelette with Irish Cheddar Cheese

Omelette Ingredients:

Serves: 2-3 people
Preparation Time: 5 minutes
Cooking Time: 10 minutes

  • 5 eggs
  • 150g of Hodgins Black Pudding
  • Half a red onion
  • 1 medium boiled potato
  • 150g bacon lardons
  • 30g of Irish Cheddar cheese
  • Chives
  • Salt & pepper
  • 1 tbsp Butter


  1. Crack the eggs into a bowl and beat.
  2. On a non-stick frying pan, add 1 tbsp of butter and let foam slightly. Add the diced onion, black pudding, bacon and boiled potato (chopped into cubes). Fry until all is fully browned.
  3. Reduce the heat, add the egg mix and make sure all the pan is coated. Grate the cheese on top.
  4. After frying for 2-3 minutes, pop the pan under the grill to cook the top side.
  5. Serve with some chopped chives and sourdough bread – (optional)
