This super simple recipe
is perfect for those
lazy weekends
Ingredients:
Serves: 2 People
Preparation Time: 5-8 minutes
Cooking Time: 15-20 minutes
- 2 cooked medium white potatoes
- 4 Hodgins Sausages
- 2 tbsp. olive oil
- 1 red onion
- 2 garlic cloves
- 1 medium red bell pepper
- 1 tsp paprika
- ½ tsp red chilli flakes
- Handful fresh parsley
- 1 lemon
- Salt & black pepper
Directions:
- To parboil the potatoes: peel and dice each potato in smaller cubes and add to a pot of salted water. Bring to the boil and let cook for 8-10 minutes until soft to pierce with a knife.
- In a large frying pan or skillet, add the olive oil and the chopped Hodgins sausages and fry for 4-5 minutes until browned. Finely dice the onion and garlic and add to the pan for 1 minute until softened.
- Drain the potatoes from the pot and add to the pan to fry. Add the chopped bell pepper to the pan and season with the paprika, red chilli, salt and pepper. Fry the mix until all have a golden-brown colour, roughly 5-6 minutes.
- Before serving, add in the finely chopped parsley and juice of 1 lemon.
