Feta, Apple & Black Pudding Salad Ingredients:
Serves: 1 Person
Preparation Time: 5 minutes
Cooking Time: 5 minutes
- 120g mixed leaves
- 1 red apple
- 30g dried raisins
- 60g Feta cheese
- 30g pecans
- 80g Hodgins Black Pudding
For the Dressing:
In a bowl mix the following ingredients together:
- 3 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- 1 tsp mustard
- 1 tsp honey
- Pinch of black pepper
Directions:
- In a frying pan, cut the black pudding into pieces and fry in 1 tbsp. of oil for 5-6 minutes until charred and crisp (you could alternatively grill the pudding for a heathier alternative). Core and dice the apple into similar sized pieces.
- Assemble the Feta, Apple & Black Pudding Salad using the mixed leaves, crumbled up feta, black pudding, raisins, nuts and dress with the mixed dressing mix.
