Feta, Apple & Black Pudding Salad

Feta, Apple & Black Pudding Salad Ingredients:

Serves: 1 Person
Preparation Time: 5 minutes
Cooking Time: 5 minutes 

  • 120g mixed leaves  
  • 1 red apple  
  • 30g dried raisins 
  • 60g Feta cheese  
  • 30g pecans  
  • 80g Hodgins Black Pudding  

For the Dressing:

In a bowl mix the following ingredients together: 

  • 3 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 1 tsp mustard
  • 1 tsp honey
  • Pinch of black pepper  


  1. In a frying pan, cut the black pudding into pieces and fry in 1 tbsp. of oil for 5-6 minutes until charred and crisp (you could alternatively grill the pudding for a heathier alternative).  Core and dice the apple into similar sized pieces.  
  2.  Assemble the Feta, Apple & Black Pudding Salad using the mixed leaves, crumbled up feta, black pudding, raisins, nuts and dress with the mixed dressing mix.
