Hodgins One Pot Wonder: Sausage meat and chunky vegetables slow cooked with rice, white wine and fresh herbs

Delivering substance and
flavour to this quick and easy
one-pot wonder

Ingredients:

Serves: 2-3 people
Preparation Time: 10 minutes
Cooking Time: 30 minutes

  • 300grams of Hodgins Sausage Meat or 6 Hodgins Sausages (removed from the skin)
  • 1 onion
  • 3 garlic cloves1 bell pepper
  • 80g mushrooms
  • 100g courgette
  • 100g Arborio rice
  • 400mls of chicken stock
  • 50g of Parmesan cheese
  • 1 tbsp tomato puree
  • 1 tsp of paprika
  • 1 tsp of cumin

Directions:

  1. In a high sided large saucepan, add 2 tbsp of olive oil and brown the sausage meat. Fry until the meat has browned.
  2. Add in the chopped onion, pepper, mushrooms, courgette and garlic to the pan. Fry off until all is softened and aromatic.
  3. Lower the heat, add the rice to the pan along with the wine, stock, tomato puree, paprika, cumin and a generous pinch of salt and pepper. Stir and cover with a lid.
  4. Once the stock has been absorbed and the rice fully cooked, stir in some Parmesan cheese and serve with some fresh parsley.
