Delivering substance and
flavour to this quick and easy
one-pot wonder
Ingredients:
Serves: 2-3 people
Preparation Time: 10 minutes
Cooking Time: 30 minutes
- 300grams of Hodgins Sausage Meat or 6 Hodgins Sausages (removed from the skin)
- 1 onion
- 3 garlic cloves1 bell pepper
- 80g mushrooms
- 100g courgette
- 100g Arborio rice
- 400mls of chicken stock
- 50g of Parmesan cheese
- 1 tbsp tomato puree
- 1 tsp of paprika
- 1 tsp of cumin
Directions:
- In a high sided large saucepan, add 2 tbsp of olive oil and brown the sausage meat. Fry until the meat has browned.
- Add in the chopped onion, pepper, mushrooms, courgette and garlic to the pan. Fry off until all is softened and aromatic.
- Lower the heat, add the rice to the pan along with the wine, stock, tomato puree, paprika, cumin and a generous pinch of salt and pepper. Stir and cover with a lid.
- Once the stock has been absorbed and the rice fully cooked, stir in some Parmesan cheese and serve with some fresh parsley.
