Easy Sausage & Potato Weekend Supper

A simple and
mouthwatering vegetable and
sausage tray bake


Serves: 3-4 People
Preparation Time: 5-8 minutes
Cooking Time: 35 minutes 

  • 6 Hodgins Jumbo Sausage
  • 2 medium red onions  
  • 3 medium potatoes  
  • 1 courgette 
  • 2 bell peppers  
  • 2 garlic cloves 
  • 2 fresh thyme sprigs 
  • 2 fresh rosemary sprigs 
  • 1 tbsp. mustard 
  • 1 tbsp. honey 
  • 2 tbsp. oil 
  • Salt and black pepper 


  1. Preheat the oven at 250oC.  
  2. In a bowl, mix the oil, honey and mustard together into a sauce.  
  3. In an oven dish or tray, add the sausages and chopped potato (dice size cubes).
  4. Roughly chop the onion, garlic, courgette and bell pepper. Add these to the roasting dish along with springs of fresh herbs. Drizzle the sauce over the ingredients and toss to evenly coat. Season with some salt and pepper.
  5. Bake in the oven at 250oC for 15 minutes, turn the Hodgins sausages and then bake for another 15-20 minutes until all is golden and brown.  
  6. Remove the herb sprigs before serving.
